Cornell Maple Camp is back! Are you interested in getting started with maple syrup production or making maple confections? This fall, learn from Cornell experts at intensive, back-to-back courses on September 19 through 23 at the Arnot Forest Maple Lab in Van Etten, NY. 

Participants in Maple Production Camp will take part in an exciting new curriculum featuring hands-on activities, demonstrations, classroom sessions, and supplemental readings. The 3-day course will walk through the whole process of collecting and processing sap in a simulated sugaring operation. Program participants will tap trees, gather sap, boil, and bottle maple syrup. Other topics covered include sugarbush management, tubing collection systems, syrup grading, and business management.

This will be followed by a separate 2-day course, Value-Added Camp focused on the efficient production of high-quality value-added products. Led by maple food scientist Dr. Catherine Belisle, this course will cover the fundamentals of sugar science and crystallization. Participants will take part in guided exercises to produce their own maple sugar, cream, and candy, as well as novel maple products such as shelf-stable marshmallows, fruit leathers, and beverages.

All classes will take place in the newly constructed Arnot Maple Lab at the scenic 4,200-acre Arnot Teaching and Research Forest located just south of Ithaca, New York. Breakfast and lunch are included with registration. Participants are responsible for their own dinner and lodging arrangements, with many choices available in the beautiful finger lakes region which is well-known for its friendly small towns and world-famous wineries.
